DXY-12HMV Microwave sesame sterilization machine is ready for shipment

DEXIYA company manufactured a custom-made microwave sterilization machine, carried out quality testing and setup, and packaged it for delivery at the factory.

This model of the microwave oven is DXY-12HMV, with three chambers and dimensions of approximately 6400*1300*2100mm (L*W*H). The magnetrons have a power output of 12kw, for a total power output of approximately 15kw. The oven is air-cooled and features limit switches (to shut off the microwave when the door is opened). The touchscreen control panel is available in Russian and Chinese. A monitor allows you to monitor the food's movement within the drying chamber.

The customer purchases the microwave unit for sterilizing sesame seeds. Microwave sterilization is a modern food processing technology that utilizes the thermal and non-thermal effects of electromagnetic waves to destroy microorganisms. Compared to traditional thermal sterilization (such as steaming and baking), it offers significant advantages, including high heating rates, short sterilization times, relatively low temperatures, and better color and flavor retention. It is particularly suitable for products such as sesame seeds, which are sensitive to high temperatures and easily oxidized and spoiled.


The principle of microwave sterilization can be summarized in two main aspects: the thermal effect and the non-thermal effect (biological effect).

1. Thermal effect (dominant): This is the most important mechanism of microwave sterilization.

- Heat generation method: DXY industrial microwave frequency of 2450MHz. When sesame seeds are irradiated with microwaves, polar molecules such as water molecules and salt ions inside the seeds will vibrate violently and rub against each other due to the rapid change in direction of the microwave electric field, thereby directly generating heat within the material.

- Rapid and uniform heating: Heat is generated from the inside of the raw material and transferred outward, which is completely different from the traditional outside-in heating method. This allows the sesame seeds to reach sterilization temperature in a very short time (typically controlled in the range of 70°C to 90°C, significantly lower than the 150°C and higher used in traditional roasting).

- Sterilization effect: High temperatures can denature proteins and inactivate microbial enzymes, disrupting their cellular structure, thereby killing bacteria, mold, and yeast. For sesame, the primary goal is to reduce the total number of bacteria and coliform bacteria, as well as effectively destroy heat-resistant bacteria of the genus Bacillus to extend shelf life.


2. Non-thermal effects (auxiliary and synergistic effects): These are the specific biological effects of electromagnetic waves on microorganism cells in a microwave field, in addition to thermal effects.

- Cell membrane disruption: Microwave electromagnetic fields can alter the permeability of the cell membrane and the potential distribution, leading to leakage of cellular contents;

- Interference with genetic material: Microwaves can interfere with the DNA or RNA of microorganisms, affecting their normal reproduction and physiological functions;

- Synergistic effect: Based on thermal effects, non-thermal effects facilitate the destruction of microorganisms at relatively lower temperatures, which is one reason why microwave sterilization sometimes produces better sterilization results than traditional heating.


The main advantages of microwave sterilization of sesame seeds:

1. High efficiency and speed, energy and time savings:

Microwaves directly affect the water molecules and polar substances inside the sesame seeds, achieving high energy conversion efficiency and completing the sterilization process in tens of seconds or minutes.

 

2. Thorough sterilization and long shelf life:

Heat is generated simultaneously from within the sesame seeds, eliminating the "burnt outside, raw inside" temperature gradient common with traditional heating methods. This ensures uniform and thorough sterilization of bacteria, mold, and yeast, particularly effective against microorganisms hidden inside the sesame seeds.

 

3. Superior quality:

1) Sesame seeds retain their original color after microwave sterilization, ensuring superior appearance and quality. 2) Relatively low temperature and rapid processing prevent significant loss of volatile aromatic compounds, such as sesame oil, preserving the aroma.

3) Effectively reduces damage to heat-sensitive nutrients, such as vitamin E and unsaturated fatty acids, preserving nutritional components.

4) Superior texture: Prevents excessive moisture loss or charring, maintaining the crisp texture of sesame seeds.

 

4. Safe and clean, free from contaminants:

1) Physical process: Purely physical sterilization by electromagnetic waves, without any chemical preservatives or fumigants, leaving no chemical residues;

2) Non-ionizing radiation: Microwaves are non-ionizing radiation, leaving no radioactive residues after sterilization;

3) Environmentally friendly: The processing does not produce wastewater, exhaust gases, or waste.

 

5. Highly intelligent and automated:

1) Accurate and controllable: By adjusting the microwave power and transmission speed, the sterilization temperature and time can be precisely controlled, ensuring stable process parameters and promoting production standardization;

2) Online integration: Easily integrated with cleaning, drying, cooling, and packaging processes to form automated continuous production lines, improving production efficiency.

 

6. Combines drying and insect killing effects:

1) The sterilization process effectively evaporates some of the moisture, achieving a certain degree of drying and regulating water activity, making it more suitable for long-term storage;

2) Microwaves have a lethal effect on insect eggs and larvae, ensuring simultaneous insect destruction.
